Omelette

I like this one since it is quick and easy and can be made entirely from ingredients we produce here.

Ingredients

  • 3 eggs
  • Onion / leek / multiplying garlic
  • A good sized handful of herbs including: thyme, sage, parsley, oregano, dill, chives, marjoram
  • Optional extras: cheese for topping, few leaves of spinach or other strong greenery
  • Spices if you wish: pepper, cumin, chilli etc.

 

Procedure

Fry chopped onion, leek etc.

Beat eggs until blended then mix in any salt and spices

Mix finely chopped herbs and other greenery

Pour mix into hot fry pan over top of the onion. You may need to spread out the mixture to ensure uniform coverage as it is a thick mix.

Cover and cook until lots of small holes form on the top. I sometimes dribble a small amount of water around the edge so it steams and lifts the edge of the omelette making flipping easier.

Flip the omelette over and add some cheese if you wish then turn off the heat and cover for a minute or so. Allow to cool then consume with toast and plum sauce.
